I think these are the demons I will pull out Bloodgift Demon, Eater of Hope, Overseer of the Damned, Silent-Blade Oni, Malfegor, Shimatsu the Bloodcloaked. All of these demons are either low impact or highly situational.

I really like the idea of adding Woodland Bellower to the deck. It has 12 targets in the deck as of now, several of which have enter the battlefield effects or sac effects. I'm just not sure what I'd remove to replace it. Possibly Terastodon or Eater of Hope? What do you think?

I love this deck! As others have said, your commander is holding you back. If I were you, I'd make your commander Mairsil, the Pretender when he comes out on the 25th of August. He is SOOOOO versatile in this deck, with stuff like Eater of Hope or Razaketh or Bident of Thassa or whatever. You would just need some flicker stuff like Conjurer's Closet, Ghostly Flicker, etc to really abuse the ETB ability on Mairsil, and then you'd just need to swap out some non-relevant creatures for stuff with an activated ability.

First, for potential cuts: Bloodbriar (there are better options like Mortician Beetle), Agent of Erebos, Eater of Hope, Pharika's Mender, Skullwinder, Vampire Aristocrat (see Bloodthrone Vampire), Vampire Nighthawk. Also, depending on how you feel about your top-curve creatures, those could be flex spots.
I love how strong this deck is with ETB abilities and "when this dies" abilities. Treasure Keeper is phenomenal, for one. You've also got excellent one-shot sacrifice outlets like Devour and kickers and so forth. The permanent sacrifice outlets like Viscera Seer and Jarad are great, but there are few enough of them that you might have trouble sticking a sacrifice outlet.
So, what I would focus on at this point would be finding ways to cheat your fatties into play from the grave, and finding redundancies in your "permanent" sacrifice outlets. There's nothing worse than being a reanimator player with no grave and no ways to sacrifice creatures (it happens...and not always on bum draws). Splinterfright, Jarad's Orders, self-mill like Deadbridge Chant, and anything Dredge (like Stinkweed Imp) will fill your grave with creatures for you, so that when Meren has sixteen counters you'll actually have targets worth pulling. Disciple of Griselbrand, Nezumi Bone-Reader, Birthing Pod are all ways to get more sacrifice triggers when you want them. And don't be afraid to up your curve with Xathrid Demon or other high-CMC win-condition-like cards.
Then, I guess if you're feeling extra adventurous, I'd investigate ways to produce more tokens, because a lot of those sacrifice effects are still powerful for non-tokens, and tokens will help you go wide when you stick Pathbreaker Ibex. Golgari Germination, Verdant Embrace, Ogre Slumlord are all options. The worst part about GBx reanimator imo (I run Karador, Ghost Chieftain) is that the endgame is pretty grindy, so going wide with tokens is a must for me if you want to play a second game.
So, in summary, the deck is super strong in staples/ramp/card draw/core mechanics. Self-mill/extra sacrifice/token synergies are things you can pick and choose to personalize and make it fun for you, the pilot. Best of luck, and be sure to mention me if I can help with anything else!

I've been thinking of replacing Eater of Hope with Harvester of Souls and Young Wolf/Wall of Blossoms with Viridian Emissary. I also want to make room for Golgari Signet/Cryptolith Rite and Nyx Weaver.

Interesting. A few pointers/suggestions; Your CMC (converted mana cost) is extremely high, hovering around 4.5. A good number to try and start at is around 3 to 3.5, and tweak it from there. Your deck also seems to have a bit of an identity crisis, where it is both big butts, life gain and sacrifice all at once. I would try and focus on two of those instead of all three. Since you said this is mostly for friends, i assume that it isn't super competitive, so here are a few suggestions for cuts and suggested replacements: Baleful Eidolon- its just a 1/1 deathtouch for 2 unless you pay a ton of mana. Replace with Sakura-Tribe Elder for ramp. Eater of Hope just a mediocre creature, replace with Silklash Spider so you can have a big butt and deal with fliers. Hollowborn Barghest is just a bad creature, really. replace with Blinding Angel or Defiant Bloodlord, which both do cool things. Necropolis Fiend just fights with your little bit of recursion. Id replace with Murder or Hero's Downfall so you have a kill spell. I do respect you not using Infinite combos and the list seems solid!
Perhaps it may need more early game ramp, to give it some momentum? Diligent Farmhand, Yavimaya Elder and Yavimaya Granger (don't pay the echo of course) give you extra sac triggers whilst finding land cards.
I don't want to bombard you with card suggestions, but my Prossh decklist may give you some inspiration!

Perusing the internet this morning, I came across the "seven by nine" rule. If your not familiar with it, you can check it out here, under note three - http://www.quietspeculation.com/2011/05/building-depietro-depauper/
Anyways, I found it quite brilliant. I broke out my EDH deck (The Cairn Nel Toth) and decided that it needed a serious overhaul.
I decided that my nine "slots," if you will would be the following:
Sacrifice Fodder (CMC 1 or less)
Sacrifice Fodder (CMC 2)
Sacrifice Fodder (CMC 3 or greater)
Utility/assorted random cards
So i started sorting the piles, and quickly realized I had too many cards for some slots, and not enough for others. I started the long, laborious, and painful process of cutting cards. I couldn't quite cut enough cards from the utility pile, so I decided I would have nine utility cards, and only six distinctly self-mill and CMC three or greater sacrifice fodder cards, because a lot of other cards can do those things in addition to doing their main purpose (if that makes any sense).
Anyways, I'll list the cards I have for each slot (its quite different than the original deck). Also, many cards serve multiple purposes, so I'm putting them in the category of their MAIN purpose.
Self-mill - Golgari Grave-Troll, Life from the Loam, Altar of Dementia (The best card in the whole deck, hands down. Not even kidding. Every Meren deck should run this card), Mesmeric Orb, Grapple with the Past. I need one more card for this slot (Stinkweed Imp?).
Sacrifice Outlets - Ashnod's Altar, Skullclamp, Attrition, Mind Slash, Evolutionary Leap. I don't love one-off sacrifice spells, but I have the slot for one. I've been debating between Altar's Reap, Morbid Curiosity and Eldritch Evolution.
Thoughts? What cards should fill my unfilled slots? Any cards I should replace?
