So I play in this creature-heavy meta and I'm really growing tired of it. Perhaps I need to show them what a spellslinging deck looks like without comboing off turn three.

I do have the classic Demonic Consultation + Laboratory Maniac combo in it but only to win as a backup plan. Jace, Wielder of Mysteries works as an harder to remove LabMan alternative. There are plenty of ways to win within an EDH game, besides this combo (Guttersnipe + Thousand-Year Storm , Rite of Replication + X copy spells). These just take time to develop or to get them right - I'm in a learn process myself, stack interaction wasn't that common until now (with this deck).

We need to have Kess, Dissident Mage on the field. Then we cast Demonic Consultation , naming Laboratory Maniac . Now we need to cast LabMan and get him through. With Kess, Dissident Mage 's ability on the field we now recast the Consultation. This time we name something that's not in our deck (non-Kess colors could help to clarify the Consultation for your playgroup, e.g.: Swords to Plowshares , Rampant Growth , etc). After resolving we exile our entire library. Now we need just one of our cantrips ( Gitaxian Probe , Sleight of Hand , ..) to win the match. Remember: Jace, Wielder of Mysteries works just as fine as Laboratory Maniac !
So after we got hit with a shitload of goblins/ dragons/ what-have-you and our gameplan is breaking down, we need to convert our time investment into a win. I thought about a budget-ish doomsday pile, so please correct me if I'm wrong here (still new to spellslinging). We cast Doomsday targeting 1. Gitaxian Probe 2. Predict 3. Laboratory Maniac 4. Unearth 5. Street Wraith . We then cast the Probe for , drawing Predict - casting Predict for and naming LabMan. Labman hits our graveyard. Then we draw Unearth and Street Wraith . Paying to bring LabMan back to the field, paying to cycle Street Wraith to win. So with the cost of Doomsday we need and 4 life to finish the job.
Also remember that this deck functions more like a minrange-y build. It is crucial to have enough mana in play to back up the turn your trying to win with some Counterspell s.
