There are also a loooot more green spells that can return things to hand. For this deck I'd suggest finding dual-purpose spells for recursion. For example
Dryad's Revival is also nice because of the flashback. Love some flashback in a deck that's unlikely to have a lot of draw. And Recycle!
Blood Clock would be funny.
Battle Hymn would be good for getting a lot of mana for those x-costed spells.

I will preface my feedback by acknowledging that I don't currently own my Thalia/Gitrog deck in paper and haven't played it at all IRL.
I think you are spot on in being heavy on the ramp. Since Thalia/Gitrog already has the extra land drop effect stapled on to them, I think you could stand to cut 3-4 of your 1 drop mana dorks, and 1-2 other Extra Land Drop effects. For similar reasons, I think you could safely cut Smothering Tithe. Yes, it's a great card, but I think you already have a ton of ramp, and Thalia/Gitrog taps down your opponents' lands, so it feels a bit extra. I think some of the following could be helpful:

Serra Paragon - As another recursion source for sacrificed lands and smaller creatures.

Bastion of Remembrance / Dictate of Erebos - Any edict or aristocrats effects that can punish your opponents when you choose to sacrifice creatures

Retreat to Hagra & Retreat to Emeria - More Landfall effects that can ping opponents, create sac fodder, and temporarily anthem up your board in some way.

You could even use some of the mana dork slots for hatebears and stax effects like Collector Ouphe, Drannith Magistrate, or Archon of Emeria. They can support the hate effects that Thalia/Gitrog already have, and you can sacrifice them if needed to break parity once they've served their purpose.

More removal is always helpful. I'm a fan of effects that hit all opponents, but aren't necessarily board wipes. Stuff like Dismantling Wave, Grasp of Fate, or Druid of Purification.
I hope these are helpful suggestions.

I would just add a few things, first of all, I don't know what your playgroup allows but can't you just proxy the canopys and put the real ones in whatever deck you are using ATM? that's what I do with expensive cards.I would have like 24 cavern of souls if I wouldn't, haha.
Atraxa's Fall is IMO the most interesting one, but if you want it specifically to deal with Stormbreath Dragon, it shouldn't matter much taking 4, but you may want to consider the instant speed spells since the dragon has haste.
I am there with you in the flavor man, I already had playset of vindicates and paths to exile and yet I bought Vindicate and Path to Exile as soon as I knew they existed, hahah.
About Aether Vial that's thing either hits t1 or at most t2, or you simply don't want it any more, so normally I would say either 4 copies or no copies. But that's a matter of opinion I guess.
2 Lyras and 2 Thunes is more than ok, I am sure you will find that Archangel of Thune makes your board way more dangerous than Lyra Dawnbringer.
To be fair Linvala, Keeper of Silence is there still for flavor but it's probably the weakest card of our side, the next one out If I need something. If you have it, go for it, but I wouldn't recommend expending en them.
About the deck itself. 7 instant and sorceries are too much. The more instant/sorceries we have less angels we have to ensure our strategy, hitting our triggers every turn, and maximice both Serra Paragon and Sigarda, Font of Blessings (in case you en up playing it) and well, the most creatures we have the most attacks we make, xD. The thing is pretty much the same as with Shadowspear, you can afford to have 1 of silver bullets in decks like death and taxes or goblins, which have multiple ways to search for your silver bullet. But you dont have any, so 1 offs cards for very especific situations 95% of the times are going to be horrible dead draws that won't help you. While in the matches you want them you are very likely not drawing them. To make a competitive deck you need to focus the deck, what are the biggest threats for your deck? that's what you have to focus one, in this case a few cheated big creatures Archon of Cruelty and permanents that shut us down like Ensnaring Bridge. So prepare for that, for any other more uncommon situation, that's what the side is for. Redundancy es the key to consistency, and consistency is the key to regularly win.Try to focus the deck in what it wants, putting angels in play to trigger our shenanigans. So I would try at most to have just 4 instant or sorceries, the ones that cover our biggest weaknesses, most likely 2 Paths to Exile and 2 of any combination of Vindicate and Anguished Unmaking. Because with 7 you are diluting too much the objective of the deck, while adding 3 or 4 one offs that are going to be death draws more often than not, not even overall useful cards. I explain myself like shit but I think you understand what I meant, xD.

Similarly, how would Serra Paragon work with an Adventure card in my graveyard? Can I only cast the permanent portion, or can I also cast the Adventure? If I can cast the Adventure, is the 3cc limitation imposed on the Adventure or the permanent's casting cost?

Now that the full card list is up and searchable I figured this is the current breakdown.
Invasion of Gobakhan Flip flips to Lightshield Array Flip
The front side of this battle card doesn't do much except maybe slow down the strongest player. We wouldn't necessarily play it on curve but flipping the battle would be pretty easy and its effects would happen the same turn we flip it. Not only does it grow the entire angel army with continued aggro it serves as a protection piece against single target removal or damage spells which is great. Also, when we sacrifice it the battle goes into graveyard which can then be recurred with Serra Paragon or Emeria Shepherd.
I fully suspect this card to be double digits on release as it does so much for white aggro decks. Getting card draw on an angel stick is great and it curves out perfectly. It also encourages others to aggro your opponents, usually the combo players.
There aren't many 3CMC angels and this one has a pretty useful ability. Unfortunately we don't have too many ETB targets for it. Typical targets would be Inspiring Overseer or Sanctuary Warden for the draw or a mana rock to drop more threats.
This enchantment has the same effect as Firemane Commando but lacks any other useful effects. It fits into the same category as Folk Hero as it'll essentially be a draw a card per turn. While Hero would require Giada to be out, Alliance would require 2 creatures to attack. I figure after a board wipe it would be faster to draw with Hero as you could drop Giada and another angel and draw. If you have Alliance then you could do the same but then need to wait a full turn to attack in order to draw.
This equipment is great for tribal decks and can serve as additional card draw for 3CMC total. I'd say it serves a better purpose than Rogue's Gloves as the total cost is 1 less and it provides a slight buff, provides vigilance, triggers on attack instead of combat damage and can pull threats from the deck. On the off-chance that it whiffs then it's obviously worse but with 29 Angels in the deck statistically there's 1.75 Angels out of 6 cards.
This was mentioned in an article as the best white card of the set. I think it serves as a decent protection spell for 1 but I'm not sure how many we'd actually want in the deck.
Invasion of Dominaria flips to Serra Faithkeeper
Apparently this card isn't in the database yet but gaining 4 life and drawing a card is OK for 3CMC. It'll help trigger the lifegain payouts when there's no lifelinker on board. It also flips into a Serra Angel which is decent although you need 5 damage to flip it. I also like how it's recurrable like Invasion of Gobakhan Flip.
5CMC for its effects just aren't that great.

Yes, Agent of Erebos looks really nice as a step between that can lead to a 5 drop. Enchantment creatures were always an interesting part for me too, especially if they have etb effects like Spirited Companion, but in the end I found Moon-Blessed Cleric to be the best option for smoothing out searching, as that way I can go into any enchantment and creature just from a two drop (which are also the most common and expendable enchantments in the deck). However adding a 5 mana enchantment creature would open up the deck for 6 drops, which would completely change everything and allow for options like Muldrotha, the Gravetide, which would pretty much endlessly recycle stuff. Ultimately it could potentially end up streamlining the deck too much though and kinda take away the entire toolbox approach it is going for, where instead of using Enigmatic Incarnation to setup a wincon, the wincon is getting high value threats that work on their own well enough and just get silver bullets to every threat out. Agent of Erebos would be a great inclusion for that though.
What I'm currently thinking of is enchantment retrieval that isn't just one time only (like Cavalier or Renegade). Lurrus of the Dream-Den would be perfect to recast omens, but sadly it's banned, even though this deck wouldn't even use it as a companion. Serra Paragon is a strong option and not completely overboard, but rather expensive. Muldrotha needs 6 mana, so any other way to cast an enchantment from the gy repeatedly would be great, especially with fires of invention making the cast for free anyways. Getting that kind of recursion would be really great for the deck.
Another strong option I'm currently looking at is Shalai, Voice of Plenty. She pairs especially well with Kenrith, granting him Hexproof while Kenrith accumulates value and power with his abilities, and once Shalai has eaten a removal, Kenrith can use his 5 mana ability to reanimate her, creating an extremely durable base and a hard to break board state, as these two combined cover almost any option, with Shalai ruling out most removal and blocking fliers while Kenrith gathers life, power and cards while Enigmatic Incarnation keeps pumping out threats and removing threats.

First game of the year. I'll probably be playing Giada less now as I think the list is pretty optimized at this point.
Opponents: Arvinox, the Mind Flail, Sigarda, Host of Herons, Gisa and Geralf
Starting Hand: Plains, Plains, The Ozolith, Court of Grace, Bishop of Wings, Serra Paragon, Mangara, the Diplomat
Starting hand wasn't great as I would need to draw a land to curve out but I had 2 draw cards in hand so I figured it was worth it. Luckily the table was playing pretty slow and I drew into some ramp.
I started with a T1 Ozolith and drew into an Enlightened Tutor which got me Pearl Medallion so I could play my Court of Grace.
Arvinox played 3 separate sacrifice cards where I sacced my Angel tokens and dumped the +1/+1 counters onto The Ozolith to pump up my next swings. They were able to get a Bolas's Citadel out quite early but due to the constant beatdown from my Angels couldn't explode like normal.
Sigarda tried to get through my Angel wall but I always chumped blocked to protect my Monarch token. Late in the game they used a Day of Judgment but at that time I had Breathkeeper Seraph soulbonded to Giada and a bunch of Angel tokens so I let it resolve. I had a foretold Cosmic Intervention since the early game but I was maintaining so much threat with my tokens and Ozolith that I never needed to use it.
Unfortunately Gisa durdled the whole game as they were also hit by Arvinox's sacrifice cards and Sigarda's board wipe so could never really get off the ground.
I ended the game with 89 life and Giada as a 40/40 with 36 +1/+1 counters and 2 anthems.
The Ozolith like most of our 1-drops, can change the makeup of the game quite heavily from the start if we drop it T1. I've had it in a few games before but usually only drew into it mid to late game where its impact is not as great.
Court of Grace I think was in your deck before as it was mine but ended up getting pulled in favor of other cards. Now that I've had a few more games with it I think it's provides too much synergy to leave out.
I think the lifegain strategy as whole is niche and our payoffs aren't really worth it to build an entire package around. I still got to 89 life this game due to just 2 cards - Bishop of Wings and a late game Pyre of Heroes on Serra Paragon for a Lyra Dawnbringer that was essentially a win-more move rather than strategic. I know you love your soul sisters but I think in your next few games you might want to take another look at their performance. Well of Lost Dreams was kind of on your chopping block before and I think it's time to revisit that card as well.

Starting Hand: Marsh Flats, Plains, Sol Ring, Serra Ascendant, Serra Avenger, Court of Grace, Breathkeeper Seraph
T1 - Marsh Flats into Plains into Serra Ascendant
T2 - Plains into Sol Ring and Luminarch Ascension (drew into), swung in for 6 damage
T3 - Plains into Court of Grace, drew on endstep, swung in for another 6 damage
T4 - +1 Angel on upkeep, Plains into Giada, Font of Hope and held up mana to make 2 Angels, drew on endstep, swung in for another 6 damage
T5 - created 2 Angels (6 power & 7 power) on opponents end step, +1 Angel (8 power) on upkeep. Cast a Tome of Legends getting ready for the boardwipe. Swung in for 21 damage, drew on endstep.
T6 - nobody at the table had the boardwipe so I cleaned up next turn with Sigarda's Vanguard knocking out each other player simultaneously. I think this was the fastest this deck has ever performed in a 4-man pod and all the damage was dealt by me.

Thought about not including this one either as it was a slow hand and a fast game. Muldrotha comboed out turn 4 making 2 million squirrels and nobody had any interaction so we were dead on turn 5.

I had played Battle Angels of Tyr but it was quickly removed by Tevesh before I could swing with it, which is fair given a 5-man pod.
Instead I went for the slower play with Giada, Font of Hope, Angelic Curator and Angelic Sleuth on the field. I held Pyre of Heroes in hand thinking I would go for the Inspiring Overseer / Serra Paragon line to draw into some cards and get some clues.
However, Muldrotha again was a huge problem turn 5. They had Scute Swarm and cracked some fetches and played green ramp spells bringing up their total to the low 100s but they only had 32 they could attack with. They decided to swing all of them at me as I was the only one with any sort of board presence. O-Kagachi let the table know they had a fog effect but we elected to use it on the next turn.
At this point I had Giada, Font of Hope, Angelic Sleuth, Righteous Valkyrie and Pyre of Heroes on the battlefield. Once Muldrotha had started producing massive amounts of Scutes I knew they were coming at me. Also I had drawn into Archangel of Thune which I played and swung in bringing me back up to the low 20's.
On turn 6 O-Kagachi used the fog and Muldrotha just set themselves up better for the next round. They cast a Sandwurm Convergence to stop me from knocking them out.
Tevesh decided this was the best time to go off so they tapped out for a Peer into the Abyss. A lot of artifact shenanigans happened and they ended up at 4 life due to Bolas's Citadel, nearly wiped the board with Ugin, the Spirit Dragon and killed Muldrotha with an artifact creature with Cranial Plating and Lightning Greaves. Unfortunately they didn't see that O-Kagachi was out and only -5 for Ugin so they were dead to the dragon on their turn.
I was able to build back relatively quickly as I drew into a Thorough Investigation and cracked some clues. O-Kagachi became the new archenemy as they had their commander out and a Fist of Suns so they were casting high-costed cards with the limited mana they had. Koma used Kiora, the Crashing Wave to negate the damage of O-Kagachi's commander. They also countered a Conflux which could've ended the game.
I tried to swing in once but was stopped by a fog. I also made another misplay with Oblation targeting their Myojin of Seeing Winds as I misheard thinking it was a 10/10 flying indestructible when it was a 3/3 that didn't even fly. They removed the divinity counter drawing 12 and drew another 2 off Oblation. Next turn they cast a Morophon, the Boundless and dropped all the spirits they drew off those 14 cards. If I had held up my Oblation for their fist of the suns instead they would have had no mana for anything else and I could've swung in for the win.
Court of Grace was also amazing here. While 1 card a turn is not the best for 4 mana, 1 card and 1 angel for 4 is amazing. Obviously the Sol Ring did work in getting it out early but against slower decks they had no way to attack me regardless.
Pyre of Heroes was actually useful this time! Pitching the 2/2 body of Angelic Curator into a Righteous Valkyrie is a strong move. I was only able to use it once before the Ugin exile but it helped keep me in the game. Without it, I would've been dead right after Tevesh finished off Muldrotha, perhaps even in the same turn.
Sigarda's Vanguard was also great again. However if I'm not planning out dropping my angels out in the correct turn order then I'm not always getting the full benefit from her. Akroma's Will would save us the headache of counting and planning while also providing the evasion to get through flying creatures. I think I'll still stick the Vanguard as the light recursion package allows us to bring her back on another turn for additional value whereas Will would just languish in the graveyard.
We had a turn 0 discussion before games 2 and 3 and agreed on playing more mid-tier decks as I only brought Giada. The Muldrotha player typically durdles with nothing to do and decided to add in some spicy cards not knowing how they'd perform. Tevesh doesn't always go off like this but Peer into the Abyss is usually a card that gets countered. The table let it resolve due to needing to knock out Muldrotha first.
