Sacrifice comes in two types:

  1. Sac your opponents creatures (and often yours) to buff Elenda.

  2. Free or cheap sac outlets for removing your own creatures to buff Elenda and to respond to opponents.

Elenda will build the base of your deck but you need swarms of creatures you can chump with and sac on the reg to build up your engine.
Before the commander death trigger rule change, Elenda needed a significant amount of your deck geared around reviving her from your graveyard. Even with the rules change however, you want Elenda to be dying a lot, so finding ways to cheaply keep replaying her is pivotal.
Angelic Destiny — Immediately makes Elenda or another creature a threat. The fact that it returns to your hand upon death is very useful but it's expensive so try to make it last.

Blade of the Bloodchief — Put on Elenda to make stupid big very fast. If you can repeat sac Elenda a couple times a turn with this you can recycle her around netting a crazy amount more vampires.

Eldrazi Monument — With Elenda out, gives her some removal defence and evasion, if you've an army of Vampires it can turn your board from control pillow to threat very quickly.

Fallen Ideal — Arguably better than Angelic Destiny in the right boardstate, the flying alone is already worth. Buffs Elenda for more than a single vamp is worth so you can potentially recycle a lot of creatures into Elenda and then sac her to Fallen Ideal for a fresh huge army.

Gift of Immortality — Opens the door for a lot of Elenda's multi-deaths-in-a-single-turn turns. Can be dealt with by your opponents a couple ways but if you always play when you've a free sac outlet for Elenda and you can mitigate most of those. Best target for Sun Titan also.

Dismember — Excellent removal, often catches players off guard with your single untapped colourless mana.

Vindicate + Mortify — Your main means to remove opponents Enchantments, which on occasion can really hose Elenda, so good to hold onto for the right moment.

Swords to Plowshares — Very important card but doesn't trigger Elenda's ability.

Murderous Cut — A holdover from the pre-commander death trigger rules change, you can use the Delve ability to exile Elenda from your graveyard to move her back to your Command Zone. That's become a rarer need-to-do, but this remains in as it's good for removing cards from your grave.

Damn — Modal Removal/Boardwipe. Useful in a pinch.

Ritual of Soot — Specifically chosen to hit everything smaller than Elenda whilst keeping her alive. Less useful when you've a board full of tokens but tends to catch folks off guard.

Slaughter the Strong — Because this causes sacrifice rather than destroys, this is a very useful against large, scary boards. Don't be afraid to use on a huge Elenda.

Tragic Arrogance — Very powerful wipe that can put you far ahead. Be careful when using with a board full of enchantments and artifacts that're key to your strategy.

Expedition Map — Great for hunting up that utility Hall of Heliod's Generosity or missing piece of your Coffers ramp combo.

Dark Ritual — Often, one turn bump is all you need. Free commander tax avoidance if Elenda has died a few times.

Martyr's Bond — Very expensive, but game breaking in the right board state. If you can combo with a Pox , you'll set your opponents extremely far back.

Pox — Major setback for everyone, but if timed right can shoot Elenda really far ahead and leave you with enough to keep her going.

The Ozolith — Elenda's BDE card. Slower than it first appears, but needs to be dealt with pronto by your opponents.
