The problem with printing cards that are rewards for monocolor decks, is that they're either just not good enough, like Slaying Fire or instant expensive staples, like Nykthos, Shrine to Nyx. Because if the effect is good enough, the two-color decks will consider playing it too, think Cabal Coffers+Urborg, Tomb of Yawgmoth. Monocolor decks make the sacrifice of devoting to that color, and accepting its weaknesses. The best way to combat those weaknesses, is to add a color. The payoff is the manabase consistency, and leveraging the strength of the color you picked. There's a few Caged Sun or Throne of Eldraine-type cards that possibly could slot in every monocolor deck. But the fun of building a monocolor deck (I'm talking commander here) is to deepen out your limited cardpool to get the job done in a way most multicolor decks won't expect because it uses cards you normally wouldn't see in multicolor decks.
To get back on topic, in the OPs examples, if the monocolored option for similar effect is actually better, it's probably printed more recently and therefor more powerful. That's the case with Psychic Strike vs Thought Collapse and for as similar as they are (differences were already pointed out) for Merciless Eviction and Farewell. Final Judgment in its turn is older than that, and therefor more limited in application than Merciless Eviction, which is the newer card out of the two.
Aurelia's Fury vs Rolling Thunder is a bad comparison. The silence- and tap effects make the card a lot more versatile. With Aurelia's Fury you could ping a player to stop them from comboing, tap down three blockers to swing in for lethal, where Rolling Thunder only offers straight up removal or burn to the face, which Fury can do as well. Still, Rolling Thunder was printed in 1997 where Aurelia's Fury was printed in 2015.
What OP's describing is powercreep, and it's not restricted by colors.

Scenario 1 works exactly like you would hope.
Scenario 2 doesn't work, because mana abilities do not use the stack and cannot be responded to. This is in part why you can tap lands while casting a spell, rather than needing to tap the lands, wait for responses, then cast the spell. In addition, even if you use Tishana's Tidebinder against a different ability of a land, it won't remove any abilities, so the land will still tap for mana (or be usable for the ability you countered once they're able to pay the cost again). Tishana's Tidebinder could be used against the something like the draw ability of Throne of Eldraine to remove all it's abilities so that it cannot be tapped for mana in the future, but not against the mana ability itself.

am3ience : Doesn't look like Guerric has been on in over a year so his list is a little outdated. He also made some budget choices. Depending on the power level of your pod you may want to look at stronger support. I've been playing Giada semi-regularly since release and my list has evolved over time:

There a few notable angels in the year since this list:
Inspiring Overseer - while it released the same time as Giada, Guerric didn't include it. When you're going for a blink theme and Sword of Hearth and Home is out then you can essentially gain life and draw an extra card once per turn.
Guardian of Ghirapur - if you have any ETB effect angels then this one can help immensely. Or if you picked up Throne of Eldraine then you can reset it, leaving 4 white up on opponents turns which is typically the magic number for protection.
Metropolis Reformer - It's a cheap angel at 2W, has vigilance as a keyword, provides us hexproof from targeted spells and semi-lifegain from blocks or a Blasphemous Act
Firemane Commando - While it's a 4 drop it provides much needed draw off attacks which you should be doing every turn.
Roaming Throne - Not technically an angel but it doubles all the triggers. If you check my list I have categories of Angel Triggers. Anything with the keywords "At, When, or Whenever" will be doubled. Unfortunately it doesn't double Giada herself as that's a replacement effect but it can still get out of hand very quickly.
Wojek Investigator - Also a cheap angel at 2W with vigilance and usually a free clue every turn I'd consider it a strict upgrade over Angelic Sleuth. However, if you need more card draw support I'd personally pick Esper Sentinel, Archivist of Oghma or The One Ring.
I didn't add Aurelia's Vindicator or Merchant of Truth because their abilities don't justify the mana cost.
If you like Aurelia's Vindicator ability I'd recommend Angel of Serenity as the Disguise cost and ability is the same as Serenity but you don't have to jump through hoops of turning it face up. Also, you can target it with an Ephemerate or Teleportation Circle to get more than one usage out if it.

Westvale Abbey - Weakest land. You aren't a token deck, it costs a lot to activate and is hard to pull off only for a creature that is helpful, but not nearly powerful enough in EDH or relevant to your overall strategy
Phyrexian Tower - Black has other sac engines and you don't have any relevant death triggers that would warrant it's inclusion. The mana ramp is minimal
Maze of Ith - Meta call like against xenagos or voltron? It can have it's moments for sure but it doesn't produce mana unless you have urborg and unless the voltron strategy is prevalent in the meta, it can be swapped out
Lotus Vale - Scorched Ruins is strictly better and can combo with rings of brighthearth + deserted temple for infinite colorless or infinite black as long as you have a swamp. Not even saying to add them, because these lands are stripmine targets. If you were playing a lands deck, sure.
Lake of the Dead - The least likely card to cut from the list. This card I've never personally liked because it goes against my philosophy, short term gain for long term loss. Losing lands, similar to lotus in a deck that can't recur them just seems off to me. It's definitely a helpful ramp piece for sure. But that usually paints a target over your head and they remove whatever you cast (assuming it's a permanent, or can use a counterspell if non-permanent) and then you're just down one land. If this were a more cEDH build or lower to the ground I could understand it's inclusion.
Sceptre of Eternal Glory - With all the basics you will presumably add, this will be a cheaper version of Gilded Lotus at the cost of a Thran Dynamo.
Throne of Eldraine - Ramp or draw
Mana Vault - Turn 1 ramp
Extraplanar Lens - Works best with snow-covered swamps depending on the meta
Caged Sun - Expensive but does the job.
Not saying to add all of these, just some choices to see what works best with your deck/curve.
Let me know if you want some suggestions for non-land cuts as well.

Sceptre of Eternal Glory is nice, use it in two other decks. Throne of Eldraine pretty good too speaking of mana and draw.
Mind Stone I run in pretty much every other deck, great card and most likely getting added.
There's a few high cost cards I'm not getting enough out of such as Archetype of Imagination and Stormtide Leviathan for example that will most likely be removed. The aforementioned Shadowspear has been weak since hexproof has not really been an issue. Don't need both Bident of Thassa and Coastal Piracy so one could be replaced.
Added Capsize and Jace, Ingenious Mind-Mage a few days ago. I believe they'll be nice additions.
Come December I hope to be updating this thing and it already plays quite well right now. If you have any ideas for cards that might work well besides ramp please list them. I was looking at cards like Jin-Gitaxias, Progress Tyrant, but the mana cost seven is higher than I want (been working on reducing the mana cost of my decks). Things that steal or drastically slow down opponents are great.

I think I'm more inclined to include rocks than rituals, I am a green player at heart and always prefer continual rather than burst ramp! Thran Dynamo is definitely one I'll be looking at, but I've also considered Heraldic Banner and Throne of Eldraine as solid options. The biggest issue I'm having is generally what to cut for them, the same issue I have for most of these options. Any suggestions there?
Treasonous Ogre isn't one I'd seen before, I'm definitely interested in that. Birgi, God of Storytelling Flip seems more relevant if I'm trying to cast more than 2 spells in a turn, which in most cases I'm not and even then, the payoff seems too small for what the deck does generally speaking, I.E. ramp into Lathliss, then overwhelm the field with every dragon dropped after. Even most of the artifacts and enchantments currently tend to have pretty immediate effect.
I do tend to prefer to have my lands hit the field, though, so Tectonic Reformation seems mostly situationally useful. I tend to need more land draws than action draws with my current high curve, as I'm usually only doing 1 or 2 spells a turn and they're 5-8 CMC. Gamble for sure I'll be looking into, but to be honest I don't regularly find myself looking for any specific cards in the deck, my Sarkhan's Triumph is usually just finding my Utvara Hellkite, so a "win-more" situation generally, but I could see using it particularly for something like Sol Ring early to ramp more consistently. For those same reasons I couldn't really see justifying Fervent Mastery or Reckless Handling. I like being able to plan, and the random discard would be bad enough with Gamble. And yeah, Imperial Recruiter is fantastic but not so much here.
Molten Echoes 100%, I totally spaced that one. Sneak Attack seems good as well but I'd been running in mostly casual circles so I hadn't seriously considered including it before. Mana Echoes=better Birgi? Absolutely interested in this one now, I'd forgotten it existed as well! I'll be honest though, the Underworld Breach+draw spells/wheels is definitely outside of my desired playstyle with the deck, I don't tend to need anything differently than what I have in hand other than making sure I have a good mix of mana/spells in practice. I am running the Blood Moon, mostly because I happened to open the fancy foil one! My playgroups don't tend to justify a Price of Glory and all of my cards tend to be about equal in value, so I don't mind a few getting countered here and there. It tends to be board wipes that are the most impactful to me, or repeated removal of Lathliss, Dragon Queen. Stranglehold does seem good though, I may pick one up.
As far as Universal Automaton, I avoid changelings where possible mostly due to personal preference. I play a lot of tribal decks and it always feels a bit like cheating haha. I use it in decks that want multiple tribes though, like Rin and Seri, Inseparable. I assume you suggest Wandering Archaic Flip in monocolored to specifically cover what the chosen color can't do? I.E. a red deck and Naturalize? I could see it being good, but also giving my opponents the ability to choose doesn't tend to work out too well for me, they tend to focus fire me no matter the game because I play politics whether I'm ahead or behind.
