Hell's Caretaker got the axe because the restriction of activation the ability to your upkeep was too restrictive. For it to be good it required too many things to fall into place, and otherwise it's really underwhelming for a 4 drop. It had to be out, survive a round of turns, and have a good target in the graveyard. His replacement, Masticore , has been getting a lot of work done gunning down problem targets like Nezumi Graverobber and Scavenging Ooze as well as chump blockers, and late game with that mono-black mana pool it's basically a full auto. Add to that its "drawback" helps me to pitch critters for reanimation.

Cards that are too good are pretty much Triskelion (subbed with Grim Poppet ), Workhorse (Pawn of Ulamog ), and Yawgmoth's Will (Sheoldred, Whispering One ).

Not sure if this has been talked about but maybe Cauldron of Souls i imagine you'll get loads of value out of it regardless of your general being on field or not

Triskelion is a mentioned omission in the description and comments exactly for its ruthless effectiveness. Absolutely an auto-include if you're gunning for the win as often as possible, but the deck is very purposefully avoiding that sort of build due to balance issues in my meta and the sort of game I want to play. See the accordion: "Why are these cards so awful?"

Cauldron of Souls was in a suuuuuper early draft of the deck. It was funny when I got it working, but every experience was a win more situation, and otherwise just wasn't a super exciting card to draw for a 5 drop. Its effectiveness is too dependent on the board state, and when it's effective it's turning 2 tutors from Sidisi, Undead Vizier into 4 tutors, or it's pouring gravy on an already game-ending Gray Merchant of Asphodel.

Although, I've changed the way I play the deck a bit to favor ramp (burning tutors early for cards like Cabal Coffers, Crypt Ghast, or Burnished Hart), so the might not be that big a deal anymore and it would drop before my general, adding a layer of protection. I'll try slotting it in again and see what happens.
