Whenever you activate an ability that targets a creature or player, copy that ability. You may choose new targets for the copy.

So, to understand the infinite mana, first we can agree that two Forensic Researcher can set up a loop. One untaps the other, then the other returns the favor to untap the first. Repeat the loop as much as you want.
Now add Ertha Jo, Frontier Mentor to the mix. When a Researcher goes to untap the other Researcher, Ertha Jo triggers and copies the ability (because you're targeting a creature). Ertha Jo also lets you choose a new target for the copy to untap, like a land. So the loop is still going with two Researchers untapping each other, but Ertha Jo pitches in extra untapping of anything the Researcher can untap, including mana, every loop.
Unless I'm making a mistake somewhere, which happens a lot.
