No, Willbreaker only triggers when a creature becomes targetted. Effects only target if they explicitly use the word "target". You would need something like Sway of Illusion to do what you're wanting to do here.

It would suck to lose Sorceress Queen, but I think your primary win-con is to lock everything up and hit your opponent for a few damage each turn.
I don't think you need to worry so much about winning fast. Also, I think those acolytes are the bomb, and especially once you have Cowardice down, having a more consistent white mana base will help your board control.
Sway of Illusion would be too good in here. If you have cowardice down, you would return all your opponents creatures to their controller's hands! Also, it replaces itself by letting you draw a card! It works great early game too by allowing your acolytes to block red or black creatures.
Have you thought about replacing Flowstone Armor? It seems like one of your weaker components, but I guess it's nice to have an artifact down so board wipes don't get rid of it.
You might consider Ghost Quarter or some other land removal in case people play with Reliquary Tower. Seal of Cleansing is a good call because you can leave it on the board for later to deal with a Spellbook or something similar.

I am tempted to change it up dramatically, dropping black out, so it will only be Blue and White. That makes room for the Ponders also allows for more Crimson Acolyte and Obsidian Acolyte, not to mention a Sway of Illusions. But I lose all the damage that black provides, which is the win condition. What do you think?

Its an Unsummon as an enchantment. it might just be helpful to clear boards.
It might not work well with your changing of color theme, but if you have it out and then cast Sway of Illusion you can make them pick up all their creatures. Which will set them back a few turns. Thought it might help.
