As long as your life total is 0 or less, all damage is dealt to you as though its source had infect. (Damage is dealt in the form of poison counters.)

Love the concept of the deck. You could maybe add some other ways to search Enduring Ideal, I personally like Solve the Equation.
Regarding the enchantments, I quite like the interaction with Phyrexian Unlife or Nine Lives with Solemnity, as if the opponent does not have interaction for it, you essentially block them from winning. It might not be as good as Dovescape in stopping your opponent, but it has the advantage of being cheap enough mana-wise to be cast in case it got stuck in your hand.

Best card I’ve seen for Animar because one: it generates mana and paired with something like Vizier of the Menagerie, you go infinite with Animar.
Grinning Ignus. He is self explanatory with Animar. And even if you don’t have the ability to go infinite, make everything a Mountain and you can dump multiple counters on Animar each turn with him. Add in something like Altar of the Brood and now you are doing damage with him to decks.
Now if you want a game winning/play your entire deck Combo: Animar with 2 counters, Birgi, God of Storytelling Flip, Grinning Ignus, and Urza, Lord High Artificer. Animar and Birgi being down, bounce Grinning a million times. You’ll have more than enough mana to cast anything using colorless mana. That’s where Urza comes in with his 5 cost ability. Game over.
Now switch Urza out for Altar of the Brood. Milling wins. And even for someone playing Phyrexian Unlife, you still win.
Best part is if you don’t like the infinite combos, just add Grinning Ignus and leave Birgi and Vizier out. Without a way to generate red mana or use colorless mana as red mana, Grinning is great for rebuilding Animar when someone removes him.

Usually, whenever I've seen Oloro played, his main win condition is a combo of some kind. I see you run a couple of the main pieces, but here are the ones to complete them:
Aetherflux Reservoir + Bolas's Citadel + Sensei's Divining Top gives infinite lifegain, lets you draw your entire library, then you can zap your opponents with Aetherflux Reservoir until you win.
Maralen of the Mornsong + Opposition Agent is a soft lockdown combo that turns off player draws, makes them lose life while giving you additional card advantage.
I see that you run the Sanguine Bond + Vito, Thorn of the Dusk Rose combo in the deck already. If you want a redundant effect for Vito that still works with that combo, Exquisite Blood has the same effect on an enchantment for an increased mana cost.
Decree of Silence + Solemnity makes it so that your opponents can't cast anything without it just being countered infinitely. Sure, if they have ways to cast something from outside their hand, it can still be cast, but that's why I like having some cards like Drannith Magistrate or similar effects in there as well.
Dovescape + Guile is a hilariously broken combo to run as well. Counter everything, get dove tokens equal to the CMC of anything anyone casts.
Azorius also has access to a bunch of hard lock out combos. Knowledge Pool + Lavinia, Azorius Renegade , Knowledge Pool + Teferi, Mage of Zhalfir , Omen Machine + Teferi, Mage of Zhalfir , the list goes on.
Solemnity combos with quite a few cards, since it lets you abuse anything that would usually put counters onto a permanent or player. Force Bubble, Phyrexian Unlife, Decree of Silence, Celestial Convergence, Glacial Chasm, Dark Depths and Nine Lives all come to mind.
Esper is a fun color to play with if you like being the guy to repeatedly and often screw over the table. Oloro allows you to run any shell you really like, gain life even without taking him out of the command zone, and convert his own lifegain into card draw while draining your opponents. If you really want to up the archenemy factor, Sen Triplets is another Esper creature that loves to mess with anyone you're playing with.

Very nice! I love this kind of strategy. Magus of the Mirror seems like it would fit the flavour of the deck. With Phyrexian Unlife it's ability is an insta-kill for players. Angel's Grace might be nice too to let you life swap and kill someone immediately.
For taking care of indestructible 'players can't gain life' cards, exile effects like Oblivion Ring or Path to Exile would be good.

Okay. So, I think you should really lean into the control/combo shell. This deck could use combos like Sanguine Bond and Exquisite Blood, with some added redundancy in the forms of Vito, Thorn of the Dusk Rose and Marauding Blight-Priest, or Mikaeus, the Unhallowed and Triskelion to close out the game. In order to accomplish this, I think you should cut a ton of the creatures and really lean into board wipes, control spells, and resource denial.
Things like:
You could also do cute stuff like Phyrexian Unlife + Solemnity, giving yourself time to wipe the board again or go for the win with Peer into the Abyss. You should also consider taking a look at your mana base.
I'd suggest going for some fetches, checks, and shocks like:
You also have way too many plains right now. Even before you get the lands I just named, you should cut 6 Plains for 4 Swamp and 2 Island.
I know I've given you a lot of suggestions. I think if you tried putting a list together with all the cards I named, plus some of the bangers from your current list and you'd have a badass deck! Don't worry about trying to do all that right now, though. See which look most appealing/are in your price range and add those first. A lot of these should be long term goals!

You have a pretty good start here. Among the monowhite creatures with infect you still need are Lost Leonin and Tine Shrike
One issue with decks relying on poison counters for the victory is cards which can prevent them including, but not limited to, Melira, Sylvok Outcast and Solemnity. These can be dealt with cards including, but not limited to, Invoke the Divine and Revoke Existence. Elish Norn should be enough to keep Melira off the battlefield. Leeches (which would also coordinate alright with Phyrexian Unlife) could do damage to an opponent if they already have poison counters and you're unable to remove those cards.

This is a neat idea - you can get some redundant copies of nine lives that incidentally gain 10 life with Phyrexian Unlife. Hex Parasite is neat as a way to reset counters too, in a pinch.
Speaking personally on wincons, I like Decimator Web and Grindclock, but honestly stone fangs/tranquil light will help keep you in the game a lot better - getting multiple 1 and 2 mana shrines into play buys a lot of time to tutor up the combo.
With the shrines, more colours makes it run smoother; it can be achieved on a budget with a combination of cards like Abundant Growth and treasures, which also lets you threaten to cast mechanised production, even if it stays a sideboard plan.
Honden of Infinite Rage offer a 'wait and eventually win' setup in red, which would also open up Lightning Helix for aggro matchups, and pairs neatly with stone fangs. Shattered heights turns lands into removal, while calm waters finds answers and combo pieces.
