B/G, U/B, or mono-black? I've looked at making either though I currently have a U/B. Lotleth Troll seems great with Prized Amalgam though too. BUG zombies?

BUG sounds pretty exciting. Your favorite zombies + Coco + Decay + maybe even Thought Scour.
Do you have a link to your UB deck? I didn't see it on your profile, but might not have looked hard enough.

Go Sultai. I've got a Sultai list with Vengevines and the whole strategy is based on filling the GY and getting some Zombie (Gurmag Angler, Rotting Rats, Gravecrawler, Lotleth Troll or Skaab Ruinator) to cast 2 spells and get back my 'Vines. It's super powerful and very challenging :)

My Dimir list did look like this:
Herd of Walkers

And the Golgari idea is this:
Ravinnistrad Zombies

Either seem pretty fun but not all too effective or competitive.

Straight tribal zombies isn't likely to be super competitive unfortunately. You're missing a two mana lord, or an easy accelerant into the three mana ones that you do have. The closest thing on the competitive spectrum I think you'll find is actually 4C Prized Dredge. It has a fair saturation of zombies (Prized Amalgam, Gravecrawler, Lotleth Troll, sometimes Stitchwing Skaab/Rotting Rats) with a competitive strategy to win (Vengevine, Bloodghast, and Prized Amalgam swarm via discard/dredge).

GB is the most competitive. Abrupt Decay solves a lot of problems. When I say competitive I mean Abrupt Decay, Thoughtseize, and Liliana of the Veil play sets with Smallpox or Dark Confidant.
Something like this can get you there but you have to have some decent skill. It's an adaptable deck but Smallpox is a double edged sword.

Has anyone considered AEther Vial for zombies? It's actually pretty powerful with Lord of the Undeadband a ridiculous amount of the best zombies are three drops. Some discard can get you to that point and with new zombies Cryptbreaker and Diregraf Colossus the deck can go very wide very quickly. Dark Salvation is also proving very versatile and the deck can implement spells like Bone Splinters and Altar's Reap. It's a powerful kitchen table deck but can it translate? We'll find out.
