What creatures are generally good in a control deck? And what's a good number to aim for in a control deck ? 10ish-12ish?

There are no universally good creatures for control decks, but there are some generally good ones that can perform well in many situations depending on the colors. And if you really want heavy control, try to keep it under 10. They should be your win cons, with the rest of the deck being able to either stabilize, gain advantage, or protect the creatures.

If I were running a blue/white control deck bigguy99 would you have any recommendations? I'm trying to put one together

AEtherling and, more recently, Pearl Lake Ancient are the creatures of choice. It's so easy to keep your cards safe with blue that one big creature can win the game alone.

It really depends on what format, because each has its staples.

In Legacy, most pure control decks may run a set of Stoneforge Mystic, as well as some number of True-Name Nemesis and Snapcaster Mage, but it really varies in that particular format.

Modern control decks will start with a set of Snapcaster Mage, and possibly add Vendilion Clique, Keranos, God of Storms or Olivia Voldaren.

In Standard, your options for control finishers are really Ashiok, Nightmare Weaver, Elspeth, Sun's Champion, Prognostic Sphinx and Pearl Lake Ancient. I'd advise playing no more than four win conditions in your maindeck, as additional copies of those are unnecessary and clunk up your removal/ card advantage suite. If you're playing UW, I'd advise something like 2 Elspeth and 2 Sphinx, or possibly four Sphinges because Standard is full of planeswalker removal right now.

Prognostic Sphinx is good. It only hits for 3 but it is very resilient to removal and the scry helps you draw into answers and larger win cons. I also agree with pearl lake ancient. When it comes to control I would suggest not having a certain amount of creatures, but a certain amount of win cons. For example in blue white you should probably run Elspeth over a lot of other creatures even though it is not a creature.

The version I am currently running is 0 creatures mainboard and 2 Brimaz, King of Oreskos and 4 Nyx-Fleece Ram in the side

I am a Sagu Mauler fan myself, but sultai control hasn't really caught on yet. 2-6 finishers max imo. Aim for 4 methinks.

In modern, you also have Celestial Colonnade and Creeping Tar Pit. Man lands are super important.

In modern, the creatures of choice are usually Celestial Colonnade, Snapcaster Mage, Vendilion Clique and another beater like Restoration Angel, Batterskull or Thundermaw Hellkite in red versions. I've even seen Stormbreath Dragon as a beater to dodge Path to Exile.
