It doesn't have to be 60 cards, you can have more, however, if you have more than 60 cards, the probability of getting the cards that you need increase. Let's say you start the game with 7 cards in hand, now you have 62 cards in your library. If you really need one of those cards now, your odds will be 1/62. Now if you have 60 cards in your deck, and you start the game with 7 cards in hand, then you have 53 cars in your library, meaning if you need a card, your odds will be 1/53, which is much better than the previous situation.

Ok, if you want to only use these cards, these are the ones that I suggest you take out, or at least give a test drive of the deck without them:

  • 2x Borderland Marauder - these are not bad, but they don't fit your minotaur theme and don't bring much to the table.

  • 1x Juggernaut - I'm not quite fond of this card, and it's not a minotaur.

  • 1x Ordruun Commando - since you don't have it doesn't help you a lot. Plus, it only has a 1 of defense.

  • 1x Kolaghan Monument - it's too expensive to turn it in a creature, and by that time, you want to have won the game, or pretty close to end it with your minotaurs.

As for the other 4 cards, I would take 4 lands.

These are only some suggestions, and feel free to argue. I would really like to see the outcome of the deck.
