Awesome idea! I might try to build something similar, but without the infect.
Bubble Matrix is probably the best way to keep your creatures safe while still dealing all their damage.
Constant Mists is a Commander staple and works even better in your deck.
Spike Weaver is perfect for your deck since you are dealing with +1/+1 counters anyways.
Dawnstrider is probably also worth it, but much more fragile.
Arachnogenesis is a classic Fog effect in Commander.
Moment's Peace is still one of the best fogs you can play.
Finally, a home for Leery Fogbeast! I'm not sure if it's good enough, since opponents likely won't block it at all.
In terms of cuts, I think most of your current fogs could be replaced with the ones I've suggested. They are often too expensive or don't give you any additional value or can only be used once.
If most of your creatures have infect already, why play Triumph of the Hordes over another Overrun effect? You could get much stronger effects such as Craterhoof Behemoth.
