(Remember DEBT as an easy acronym for protection. This creature can't be damaged, enchanted/equipped, blocked or targeted by anything that shares a colour in the revealed toy's coat, mane or outfit. Anything attached to this that shares the same colour immediately falls off.)

Do you have a reliable source of toys for Rarity and Applejack?
Outside of the MLP cards, Unicorns kind of have a +1/+1 counter theme with Emiel the Blessed, Lathiel, the Bounteous Dawn, and Good-Fortune Unicorn. Lathiel and Celestial Unicorn tie that to life gain, with Splendor Mare and Brightmare offering further options there. There's also a little bit of ETB that Emiel can set up.
Horses don't have much of a unified theme or depth. Pick from these as needed, I guess.
Adding in Pegasi, they all have flying to help Rainbow Dash, but that's about it. Park Heights Pegasus plays well with Emiel.
The creature base looks very -heavy, with in second. There's not a ton of independent token depth. Group hug would be very on-theme, but my crippling lack of knowledge about the franchise prevents me from offering any thematic suggestions. Legendary creatures matter could work here. Do you want to get Princess Twilight Sparkle out every game, or just use her as support when needed?

Super fun topic! And a lot of good things happening here already.
I did build a deck for Rarity which is still a work in progress but it's (Rule 0) UniThorn the Aggro Pony that uses the B-side effect of Rarity giving creatures protection to hit with things like Curiosity consistently. It's an extremely fun deck to play and I love breaking it out and throwing around just tons of combat damage. I don't always win, but I always feel like I'm doing something effective, and an effective deck with an adorable pony is kinda where I'm at : )

DrukenReaps Best of luck with the Olivia deck : ) I could see it being fun and fast, and it's a really swingy card. Definitely one that could start swinging early and hit hard late.
And yep, the pony is very fun. My main idea was to use Rarity for the B-side ability of protection rather than mainly the cost reducer part. Giving a Mischievous Catgeist Flip evasion with a Reconnaissance Mission or Curious Obsession out is like a repeatable 1 mana draw 2. Or you can use protection to block removal on a biggie like phyrexian dreadnaught or save it for blocks to make Alaborn Zealot into an absolute menace.
One of my favorite pony tricks, and it's a little convoluted, but it's to get Rarity or Mother of Runes to give evasion to Taranika, Akroan Veteran who attacks with Daring Thief and it not only protects the thief but instantly untaps it for pre combat ridiculousness. No one ever expects Daring Thief to be a problem that they need to address : )

It's seems you are short a few unicorns, and by a few I mean 9. I was surprised to see that it wasn't completely intentional, because you are still playing Revered Unicorn which is obviously the worst one. First question, can you use painted minis?
Silver-bordered cards, like Rarity, allow players some leeway with the official rules, and are subject to interpretation. I think most playgroups would say that minis count as toys and thus would allow you to use it for protection purposes. There might be some, however, that say you are trying to manipulate the situation for protection purposes, and request you only use official colored toys.
Second question, would grey provide protection from colorless?
This actually does have a real answer--Rarity specifies it provides protection from the "color[s]" in the toy; per the official rules, colorless is not a color, so you will never be able to use a toy to gain protection from colorless.

I have a question regarding Rarity 2nd ability:
If I where to use a miniature (https://wizkids.com/my-little-pony/) would I be able to activate Rarity's 2nd ability if I paint the mini all 5 colors?
Also, If I use a grey My Little Pony toy would that count as colorless and would I be able to activate Rarity's 2nd ability for colorless spells/abilities?

I don't know the first answer, but I would guess you need the original colours of the toy.
Regarding the second question: As Rarity clearly states that she gives protection from colours, she can't give protection from colourless.
