With Zealous Conscripts, Gilded Lotus and Deadeye Navigator out you are unstoppable. Right?

With this infinite combo you can get infinite mana use it to gain control of permanents at instant speed, permanents you control have haste and never tap. Before untap step, take all lands they can't play anything. Basicaly your unstoppable, right?
Well, the second you complete the combo, your opponent can tap all their lands out for mana and Naturalize the Gilded Lotus or Thunderous Wrath the Zealous Conscripts , but these effects would not resolve until you are done taking all of their stuff until end of turn. So unless you take them out that turn, those abilities will resolve and your combo will end.
Tldr: Yes your unstoppable for at least a turn, but if the combo is stopped with an instant then so is your "unstoppableness".

Good luck trying to kill the Conscripts or the Navigator....just respond by flashing either or both. Would have to be an instant speed non-target board wipe. I'm not even sure if you'd get a chance in between one flashing out and coming back into play, entering play, and rebinding.

The Gilded Lotus is still vulnerable to the many artifact hate spells such as Ancient Grudge , Smelt and Naturalize .

Only thing in standard that I can think of that comes close is a miracle Bonfire of the Damned .

Hmm that's a really cool combo actually, but it's a bit clunky with three parts and also very mana intensive.

Hypersonic Dragon out and then overloaded Mizzium Mortars or Street Spasm or a dozen others. Or just Cyclonic Rift . But ya, best bet is to destroy the infinite mana.
Another way to get infinite mana though is Galvanic Alchemist soulbound to Axebane Guardian with 3 other defenders. Would be a fun GRU deck, add Thragtusk s to bind with the Deadeye Navigator also...I might look into that. I already had the GU portion built using Deadeye and the defenders....just a quick addition to add red and some conscripts. However, worth noting, there's a lot more effective ways to win with blue/red X spells if you get infinite mana. So whichever way you get it, just burn or mill for a million...

Navigating Standard I used that combo at an FNM. It's fun.

I have been testing this combo in cockatrice and liked how my deck ran. I have just now been searching for other cards to use with this. For instance i can use Thragtusk to gain infinite life, or Increasing Confusion for infinite mill, or card:Devil's Play for infinite damage, i really like the idea of Krenko, Mob Boss for infinite goblins. There are many options with this combo as of how to kill the opponent. You just have to use Farseek and card:Ranger's Path and Chromatic Lantern and other things to get your mana faster to pop off these high costs.

For the record, you do get a chance to respond to the trigger of pairing two creatures. So if either flickers, allow it, and when they try to rebind the navigator, in response, removal or bounce.
Keep in mind though, binding doesn't target, and such, is chosen at resolution. So if I have thrag, navigator and conscripts down, I flicker navigator, you in respond by burning the conscripts, I can still bind to thrag.
Its a good combo, but has its limitations. To be fair though, you don't really need the lotus and infinite mana to win. Being able to steal blockers every turn will probably win you the game on its own. Feels like a Win-More combo and a bit showing off.

Unless you do it at the end of your turn, there is no "Before untap step". Players don't receive priority until Upkeep IIRC, and even then your opponent has priority first.
