Nightsky Mimic

If I have a Nightsky Mimic and I cast a Dutiful Thrull does Nightsky Mimic trigger because Dutiful Thrull has a colour identity of black and white or does black and white have to be in the mana cost?

No, color identity was invented for Commander legality only. The top right corner of the card (or color pip in the type line) are what determine actual color of the card. Dutiful Thrull is a mono white card with and BW color identity, so it will not trigger mimic.

To elaborate, the color of a spell is not the same thing as a card's color identity.

A spell's color is determined by the colored mana symbols (if any) in its casting cost, as well as any color-defining text in the rules text box such as Ghostfire or Abstruse Interference, and color indicators such as on Kobolds of Kher Keep and Pact of Negation (color indicators also show the color of permanents that don't have a casting cost that defines the color, such as the back side of double-faced cards).

A color identity, on the other hand, as Boza said, is specifically for Commander and is used only for deck construction and a select few cards that care about a commander's color identity such as Command Tower. It has no other MtG-related rules use at this time, and doesn't factor into cards that care about a spell's color.

Similarly to how Dutiful Thrull is a white card with a BW color identity, while Ramos, Dragon Engine has a 5-color identity, it won't trigger any colors-matter cards like Nightsky Mimic because it's actually colorless.
