Will Dovescape counter all permanents with Enchanted Evening?

Would playing Dovescape after Enchanted Evening counter all future card plays?

As I understand it, Dovescape would counter all non-creature spells; enchantments are a type of non-creature spell. After Enchanted Evening is played, every permanent would be an enchantment as well as original type. Would this then cause everything to come in Doves for the rest of the game?

No. When Dovescape checks whether or not to counter a spell, it checks if it's a creature. Regardless of any other types a creature has/gains, Dovescape will not counter it as it is still a creature.

As a note, Enchanted Evening will only apply to cards on the battlefield because it does not say 'permanent card' or 'permanent spell'

Thank you! So the addition of Enchanted Evening to Dovescape's effects is really only adding non-creature permanents that are not spells to the countered list.

Enchanted Evening doesn't add anything to Dovescape's "countered list". The only way the two cards interact at all is that the tokens created by Dovescape will also be enchantments in addition to being creatures.

For any quality, an object is either "[quality]" or "non-[quality]". A creature can never be a "non-creature" unless an effect specifically removes the creature type from it. Dovescape won't counter spells like Courser of Kruphix or Walking Ballista because they're creatures, even though they have other types.

Only spells on the stack can be countered. Something that enters the battlefield without being cast as a spell can't be countered itself, but the spell/ability causing it to happen (Zombify, Flash, etc.) can be countered.

All lands, once on the battlefield, will be enchantments in addition to lands. This doesn't change any rules for playing those lands.

Lands aren't cast as spells, they're "played" without using the stack. They can't be countered.
