Infinite Life Vs Infinite Power/Creatures

So for example my opponent plays Soul Warden + Fatestitcher + Splinter Twin , and gets infinite life, and I had played Earthcraft + Squirrel Nest and attack with my infinite squirrel tokens. Would I win or would they still have infinite life?

You can't get infinite life or anything else in Magic. If you end up in a situation where you can repeat a process indefinitely, you must specify a finite number of how many times you use it or let it happen (in case of optional triggered abilities).

You must also remember that there are infinite loops out there and when those combinations happen the game ends in a draw. In this situation I probably would call It a draw as the tokens would have summoning sickness and the "lifer" would be able to get more every turn. So either hope you know a higher number than your opponent, or run it out of cards.

An example of what dbrannon has said, is a loop of 3 Oblivion Ring s and no other non-land permanents on the battlefield. This creates an infinite loop of exiling and targeting another O-Ring, as there is no MAY clause in the wording of O-ring.
I do believe that that combo would work better with Pestermite or Deceiver Exarch as Splinter Twin usually does.

You can't gain infinite life or deal infinite damage. When you do something that generates an arbitrarily large number of something, you are required to give a finite number to that thing.
So they could have gained fifty billion life, and you could make fifty billion and one squirrel tokens, but "I go infinite" is shorthand for "Unless you have a way to deal with this, you are going to concede now" and not actually a generation of infinite anything.
