How do you protect enchantments in mono green?

Yeah, I can't find anything in mono green that gives a non creature permanent hexproof or indestructible.

On the bright side, you're playing mono green and will end up having a ton of mana to re-cast your commander should he? she? snake? be destroyed. Flipping might be a slight problem, but it seems manageable.

I built a Sasaya deck too but I never worry about protecting Sasaya. Just make sure you can do something with him as soon as you flip him. Things like Rude Awakening and Hunting Wilds can untap your land if you keep at least one open after flipping.
I have found that the effort to try to protect him once flipped requires too much: everyone on the table is shooting for him anyway and you won't have two or more protection spells or enchantments in hand for this situation. Better to just run Creeping Renaissance, Praetor's Counsel, Quirion Ranger, Scryb Ranger, etc. and re-flip him again later.

I haven't played sasaya yet, so this might be a silly question. If sasaya is flipped and dies does hesheit go to the graveyard or the command zone

You can choose for him to go to the Command Zone whether he is flipped or not.

Avoid Fate is unfortunately the only option in green.
Not of This World and That Which Was Taken are colorless protection options.
Honestly though, your best bet would simply to be to generate SO MUCH MANA you can recast him over and over.
There are so many awesome cards that fill your hand with lands in a second that flipping him should never be an issue! Sprouting Vines is my favorite card for this.
