Sorry if this seems stupid but does phyrexian metamorph count as it's own creature or it's that creature

Trying to figure out out an infinite creature combo with this and progenitor mimic.

It's hard to answer that because it's unclear what you're trying to do.

You could use Cryptoplasm , but you'd have to wait a turn for the plasms to become copies.

What infinite creature combo? I'm not sure what you're going for because Progenitor Mimic and Phyrexian Metamorph don't combo. You're going to need to explain a bit more.

He meant infinite cloning, but it doesn't work, as mimic says 'if this creature isn't a token' so but you get 1 'clone' a turn.

All Clone effects are pretty complicated. Here's a basic rundown of how I understand it happens (mostly from google searching):
You cast Phyrexian Metamorph .
You choose what creature it copies, or to copy nothing.
If you choose a creature, it essentially is that card, and has all rules text/attributes associated with it.
If it copies Progenitor Mimic it would have "At the beginning of your upkeep, if this creature isn't a token, put a token onto the battlefield that's a copy of this creature." The new copy would also be an artifact.
If you don't copy anything, it has exactly the text it says on Phyrexian Metamorph .
If Progenitor Mimic then enters the battlefield as a copy of this Phyrexian Metamorph , I think the Phyrexian Metamorph 's enter the battlefield replacement effect "as a copy of any creature except.." would trigger -
706.5. An object that enters the battlefield "as a copy" or "thats a copy" of another object becomes a copy as it enters the battlefield. It doesnt enter the battlefield, and then become a copy of that permanent. If the text thats being copied includes any abilities that replace the enters-the-battlefield event (such as "enters the battlefield with" or "as [this] enters the battlefield" abilities), those abilities will take effect. Also, any enters-the-battlefield triggered abilities of the copy will have a chance to trigger.
So then you could use Phyrexian Metamorph
's ability to choose another creature on the battlefield and copy it. You can't choose to copy your Progenitor Mimic
though, because it's not on the battlefield yet. I guess if you had another Clone
out, you would get another copy trigger and could copy the Metamorph again for infinite copy triggers. With Metamorph + Mimic out you could get infinite Progenitor Mimic
triggers and at your next upkeep have a lot of Mimics.
I'm not 100% sure that's what happens. If that was your question, you should really learn to phrase things better.

Ok so here was my original plan play the metamorph as a copy of a creature and then play the mimic on the metamorph so every turn getting another metamorph and copying the mimic the next turn getting lots of creatures, but this does not work as the metamorph is essentially not a metamorph. If this did not make any sense I understand.

Your idea will work if you're able to start with a "blank" Clone (or Metamorph, etc.) and keep it alive through some effect that increases its toughness above 0. If you have something like Glorious Anthem , Builder's Blessing , Grand Architect , or similar then you can play your Phyrexian Metamorph and choose not to copy anything. Then you can play Progenitor Mimic copying the Metamorph and get the effect you're looking for.
If you had explained what you wanted to do when you posted the original question, we would have been able to give you a much more helpful response.

Phyrexian Metamorph becomes an exact copy of the chosen creature or artifact except that it's also an artifact in addition to its other types. It is no longer Phyrexian Metamorph because the name of the chosen creature or artifact is copied as well.
