Phantasmal Image Clone

I have a Phantasmal Image on the battlefield as a copy of a creature. If I cast another clone creature like Phyrexian Metamorph and target the Phantasmal Image to make the Phyrexian Metamorph a copy of the creature that Phantasmal Image is a copy of, would Phyrexian Metamorph become a copy of that creature, or would the sacrificing of Phantasmal Image in response to being targeted cause the Phyrexian Metamorph to not be able to become a copy of the the Phantasmal Image creature?
Yeah, choose and target are different things. Phantasmal Image won't be sacrificed; in addition, this means that clones can copy creatures that can't be targeted (because of hexproof, shroud, or protection) as long as they tell you to choose a creature instead of targeting it.

As others have pointed out, Phyrexian Metamorph does not target, but I did want to add information for a couple of cases:
With Phyrexian Metamorph entering as a copy of Phantasmal Image, it will be a copy of whatever Phantasmal Image originally copied, except it's an Artifact and Illusion in addition to it's other types, and it has "When this creature becomes the target of a spell or ability, sacrifice it." You won't be able to choose a new creature, and you do inherit the effects Phantasmal Image added.
Additionally, if the clone ability does target (Such as Cryptoplasm) the Phantasmal Image will be sacrificed and the ability will fizzle (Cryptoplasm doesn't change). Similarly a spell like Spitting Image will fail not create a token.

phantasmal image isn't being targeted. Phyrexian Metamorph doesn't target.
