When playing with 3 or more players not as a team, and I attack 1 person, can the 3rd or 4th person use their instant card to help that persons creature.

Anyone can cast an spell on any legal target so long as they have priority (and they're following any timing restrictions) and there's nothing saying they can't such as Grand Abolisher.

So even though it is not their turn and I am attacking another player they can help them out with an instant

Yes. An instant can be cast anytime a player has priority, and everyone has priority at least once before a spell or ability resolves, and before the game moves on to the next phase or step.

To clarify a bit: in a game with more than two players, priority is passed around the table in turn order. If it's player A's turn and the turn order is A-B-C-D, then player A is given the first chance to take an action, then player B, then C, then D. If no one chooses to take any actions then the spell/ability on top of the stack will resolve (or the game will move on to the next step/phase if the stack is empty).

Not only can they help, they can also hinder. If you attack Player B, who has a Runeclaw Bear to block with, Player C could cast Doom Blade on the bear before blockers are declared, then player D could cast Scout's Warning followed by Hunted Lammasu targeting Player B to replace the blocker.
