Can I use Brass Squire to equip an equipment during my attack phase?
Say I attack with 4 squadron Hawks, one with a sword of War and Peace (or simular attack/abbility boosting effect) then after blocking is assigned, tap a (or multiple) brass squires to switch the sword (or etc) onto an unblocked Creature?
In short, yes. As long as the target is legal you can use it as a combat trick.

which is why i don't understand why it isn't used more often... i mean 2 to flash in the sword with stoneforge, then free equip?

Brass Squire can be used exactly like you suggest. The reason is that it doesn't say "equip", but rather it says attach. Since attaching does not specify any times you cannot do so, it only requires priority, such as after blockers are declared.

abaldkj: It's not used more often because Brass Squire is a bad card. There are better plays to be made on 3 mana, such as paying the equip cost directly instead of bringing in a boltable body. Few playable equipments currently cost more than 3 mana: Batterskull is an exception, but you're not very likely to find someone equipping a Batterskull so much as bouncing it in and out of play to dodge removal. As for the other half of its ability, instant-speed equipment swapping, that's not as useful as it sounds either. Most opponents won't leave you with many creatures to bounce an equipment among, and instead of playing a mostly dud beater to bounce equipment you could instead play a better body to carry the equipment.

@BrightGreenLine Brass Squire isn't bad. Don't dis him. The ability is respectable for an uncommon. And unless you haven't noticed, nearly every 3 drop dies to bolt.
@abaldkj The reason people don't use him is because there is no instantaneous board-changing ability attached to this card. If you have 7 mana open and your opponent has a Grave Titan , you'd rather topdeck a Sword of Feast and Famine , Stoneforge Mystic to fetch the sword, or Day of Judgment to get rid of the immediate threat. This guy just becomes another chump to keep the titan busy for a turn.
Enter the battlefield effects are ruling the game at the moment. It is because even before the creature attacks, you are getting the value of 2 spells in 1. I like using Grave Titan as an example because he comes with 2/2 chums, which usually would cost you 1B mana each to cast. You are basically getting 10 mana worth in one 6 mana card.
Another example. Tutoring costs 2BB (Diabolic Tutor ) mana for any card, so with the "Equipment only" restriction that Stoneforge Mystic has, it's ETB ability is worth minimum 2 mana. This means stoneforge basically gives you 2WW mana worth of effects for 1W.
People want quick, efficient and value for mana. Brass Squire is good in casual, good against decks without removal, good in "goldfish combo", but not in competitive. It just doesn't do enough for people to run it.

There's no restriction on Brass Squire 's ability for when you're allowed to play it, so it follows the rules for any activated ability: whenever you have priority and are able to pay the costs and choose legal targets.
