As long as an opponent controls a creature with flying not named Escaped Shapeshifter, Escaped Shapeshifter has flying. The same is true for first strike, trample, and protection from any color.

Gatherer search "The same is true" comes up with, along with what's been mentioned and some less-relevant stuff, Animus of Predation (not really helpful), Escaped Shapeshifter (on a small scale), and Majestic Myriarch. For loads of keywords, there's Vampire Nighthawk, Aerial Responder, Atraxa, Praetors' Voice, and Sphinx of the Steel Wind off the top of my head.

Take care to match up which abilities are granted by which cards. Cairn Wanderer, Concerted Effort, and Odric, Lunarch Marshal all have different ability lists.

You were correct in your presumption. Basically, first strike happens before regular damage, and double strike means a creature deals both first strike damage and regular damage. They're basically both tickboxes that say "yes, this creature does first strike damage." So while a creature can have both of these abilities (in your example, an opponent's Escaped Shapeshifter would still get first strike from your Iroas's Champion) it won't function any differently in combat than if it just had double strike.
