Copy target effects?

If i wanted to use Clever Impersonator to copy an enchantment like Shimmer would Clever Impersonator still be on the field due to it becoming an enchantment?

Yes.

(Sorry for the brief answer, but I'm not really sure where the confusion is. So I can't clarify exactly. But yes, clever impersonator is on the battlefield as a copy of whatever you had it copy when it came in.)

Also, nothing in your example targets.

Cryptoplasm targets something that it copies, and remains on the battlefield as a copy (and can still target new things).

Clone enters the battlefield as a copy of something, without targeting, and remains on the battlefield as a copy.

Fated Infatuation targets something and makes a token that's a copy of that thing. The token remains on the battlefield but Fated Infatuation is put into your graveyard as it's an instant.

Yes, it's on the battlefield. Enchantments are one of the "permanent" type cards (artifacts, creatures, enchantments, lands, and planeswalkers), and permanents go to the battlefield after you cast them. In your example, both the original Shimmer and the Clever Impersonator copying it are on the battlefield.

Also, because Clever Impersonator enters the battlefield as a copy, if you copy Shimmer with it, it will enter the battlefield as a Shimmer, and you will get to choose a land type. So if the first Shimmer gave Islands phasing, the Clever Impersonator copy can also give, say, Swamps phasing.
