Mechanized Production and Liquimetal Coating

Trying to figure out if Mechanized Production can copy and permanent you control if you changed that permanent to an artifact with Liquimetal Coating first.

No. Liquimetal coating only turns something into an artifact until end of turn. You may cast MP only during your main phase and it will trigger on your next upkeep, which is well past the end of your turn.

MP will off at the end of your turn, since there it will no longer be attached to a legal permanent.

With just these two cards and nothing else involved, there is no way to create a token of something.

If you want to make copies of any permanent with Mechanized Production, you'll need something that will make it an artifact and keep it that way longer than until the end of turn. Something like Mycosynth Lattice will get the job done, though if the lattice is destroyed then the production will fall off of whatever it was attached to unless it's still an artifact.

As an intermediary you could turn something into an artifact with Liquimetal Coating, then copy it with Phyrexian Metamorph. The Metamorph will always be an artifact, so you can enchant it with Mechanized Production safely.
