if a spell destroys my Pattern of Rebirth, can it still resolve if i sac the creature it enchants instead?

You can sacrifice Mogg Fanatic in response to Pattern of Rebirth being targeted by an effect that would destroy it and Pattern of Rebirth will trigger, but not in response to Pattern of Rebirth being destroyed. Once the spell or ability targeting Pattern of Rebirth resolves and Pattern of Rebirth is destroyed it's too late.

So, in short, yes. You just have to be clear about the timing. Timing may be an issue in some cases, for instance if a card has Split second like Krosan Grip you will not be able to respond with an activated ability like Mogg Fanatic's self sacrifice.

A sac outlet such as Ashnod's Altar is considered a mana ability which can be used to sac said creature in the case of a Krosan Grip happening as mana abilites don't use the stack.

Note that the fact that mana abilities don't use the stack is not the reason they work through split second. Mana abilities are specifically exempted from split second's effect. Effects such as that of Stony Silence, which put a blanket prohibition on ability activations, stop all activated abilities, including mana abilities.

Additionally, Split second's interference with the stack is only the result of its effect, which is the prevention of casting spells and activating abilities that aren't mana abilities, it does not directly prohibit things from going on the stack. Triggered abilities, for example, will still go on the stack as normal.

Yes. It stops the activation of any abilities of artifacts. It doesn't matter whether they're mana abilities or not.
