if i had a creature with hexproof like invisible stalker then someone played something like day of judgement that doesn't target things individually would it kill the creature with hexproof

Hexproof cares only about targeting. If the spell of ability doesn't target hexproof does nothing.

Invisible StalkerMTG Card: Invisible Stalker, Day of JudgmentMTG Card: Day of Judgment

Any spells or abilities that don't assign a specific target can still affect creatures with hexproof. For example, Day of JudgmentMTG Card: Day of Judgment, Black Sun's ZenithMTG Card: Black Sun's Zenith, and SlagstormMTG Card: Slagstorm are popular mass removal cards in standard and will get rid of almost any hexproof creature.

Additionally, cards like Phyrexian MetamorphMTG Card: Phyrexian Metamorph and Phantasmal ImageMTG Card: Phantasmal Image do not assign a target and therefore can enter the battlefield as a copy of another creature with hexproof that is currently on the battlefield.

Literally, if it doesn't say "target", it doesn't target.

Only cards that have "Enchant (blank)" and are played as a spell target, yet do not have "target" in their text.
