Can you use Cancel on a artifact equipment?
You can counter it if it is being cast because it's a spell. You can not, however, counter someone equipping it.

Almost everything that can be played in Magic is a spell as you cast it. Sword of Fire and Ice is an artifact SPELL when you cast it for its casting cost and it goes on the stack; if it resolves and goes on the field, it becomes an artifact equipment PERMANENT. Cancel and any counterspell can target and try to counter any SPELL, but they can't target or do anything to PERMANENTS. So as long as you cast the Counterspell in response (right as they are casting it) to them playing the equipment, yes, you can counter it. If it goes on the field (which means they can equip it and do things with it), you can't.

I think I know what's causing your confusion: When the reminder text of the Equip ability says "equip only as a sorcery", it doesn't mean activating the equip ability counts as a sorcery spell. It means "activate the equip ability only at a time you'd normally be able to cast a sorcery spell: during a main phase on your turn when the stack is empty". Reminder text is written in a way that is meant to save space and give a general explanation, rather than including every little detail in the text of the card.

You can counterspell the equipment itself as at the moment it resolve it's simply a spell, although you can't counter the activated ability that Attach the equipment to a creature, if you want to do so, look for stuff like Stifle , Interdict , Squelch , Rust and so on.
