Can Trait Doctoring change a mana symbol in a card's text box?

I'm basically wondering whether Trait Doctoring can make cards like Avacyn's Pilgrim and Zhur-Taa Druid produce a different color of mana - I'm feeling like it can...? Any help much appreciated!

No it can't. It can only change text referrences to colors and land types. But its effect is not restricted to text box only. It also affects the type line. So you can for example change a Forest into a Mountain , change swampwalk to forestwalk, protection from red to protection from white, change the ability of Stronghold Assassin to kill nongreen creatures, etc. There are many possibles uses, but the one you are mentioning is not among them.

Not change the mana symbols per se, but you can change the color of a creature with something like turn from Turn / Burn

I guess that's not exaclty what Arcticus is looking for. I'm not aware of any cards that could change the type of mana that Avacyn's Pilgrim produces. The only thing close enough that I can think of are auras: Multani's Harmony and Utopia Vow .

No. Trait Doctoring changes color words or basic land type words. You can kind of get the same effect by using it to change the basic land type of any land with BLTs because BLTs confer the ability "T: Add [relevant color] to your mana pool."
However, you can't use Trait Doctoring to directly change the mana symbols on any cards.
