Who chooses the targets for Memory's Journey?

My opponent has a Monstrous Carabid, a Pale Recluse, and a Deadshot Minotaur in his graveyard.

I cast Memory's Journey, targeting him.

Do I get to choose for him to shuffle the beetle, spider, and bull into his library, or does he get to choose?

Memory's Journey not only targets the player,but the cards in the graveyard. So you can choose any of those 3 cards to shuffle into your opponent's library.

If a spell or ability allows a player other than its controller to make a choice, the wording will be explicit about that. For example, Gifts Ungiven and Evangelize state that an opponent is the player to make a certain choice. If it isn't explicitly stated that another player is making a choice, the spell's controller makes that choice.

Yes. As I said, targets are chosen by the player who casts the spell and choices are made by the player who controls the spell when it resolves unless otherwise specified. Memory's Journey says nothing about another player making any choices.
