Does a card care how it gets exiled?

If I unearth a creature with Sedris, the Traitor King and then use Helvault on the same creature, will I get the creature back from Helvault or not?

Yes, you will. The full up-to-date rules for Unearth make it more clear that the creature will go to exile "instead of anywhere else". That means if something is trying to move the creature to exile anyway then Unearth won't interfere with it. There's also a rule that basically says if a replacement effect would try to replace an event with the exact same event then you don't bother applying it.

There's a slight caveat that that if once the card is already exiled, if it gets exiled again it will be a new object. That is, if your opponent plays Rest in Peace and then plays Processor Assault choosing one of the cards exiled by Helvault to put into your graveyard, that card will stay in exile but no longer be exiled with Helvault.

I see, so my creatures could still be affected by an opponent's Riftsweeper too, even if it's under my Helvault.

Right, there's just one exile zone shared between all players, kind of like the battlefield. The main difference is that cards usually can't do anything while they're in exile. A card in exile for any reason can be affected by spells and abilities that specifically interact with cards in exile.
