stonecoil serpent and affinity

Say I have Mycosynth Golem on the battle field with 6 other artifacts and 3 land. Can I cast Stonecoil Serpent with X being 10 d/t golem giving it affinity for artifacts ??

Yes, that works. You decide on the value of X before calculating the total cost to cast the spell. In your example you choose X=10, the base cost becomes , affinity reduces that by , so the resulting total cost is .

Fun fact: there was actually a very similar basis for the famous Eldrazi Winter deck. Eye of Ugin was able to reduce the cost of Endless One to pump out weirdly large creatures for very little cost.
