question about multi colored lands

So lets say i have... Golgari Guildgate out. it's green/black.... does it count as a forest, and a swamp? so I can sacrifice it for Jarad as a forest or a swamp right... Similar if I have Rakdos Guildgate out and activate Koth of the Hammer 's -2 would it add an additional red for the red in Rakdos Guildgate ??

No. A land only has a basic land type if its typeline specifies that it does.

For example, Golgari Guildgate is neither a Swamp nor a Forest, but Overgrown Tomb is both a Swamp and a Forest.

Having the ability to produce a color of mana doesn't make that land the appropriate basic land type.

There seems to be some confusion with some word here.

First, most of the land have no color. Except for Dryad Arbor , you can consider all land has colorless.

All cards have type and some have subtype.. A type is land while a subtype is basic for instance. Havins the ability to produce a color doesn't make the land either colored nor basic.

Another subtype is forest. If it isn't written on the card, it is not a forest. Some non-basic land may have numerous subtype like forest AND swamp.

So a card like Koth of the Hammer can use your Mountain and your Madblind Mountain but not your Spinerock Knoll .

Also, if you use Jarad, Golgari Lich Lord , and want to use is last ability with Overgrown Tomb , you will need to sarifice two of them.
