Evoke Creatures and Resolution of Abilities

For example:
Shriekmaw can be cast for to destroy a creature, and then it would be sacrificed due to Evoke's text.
My understanding of this would be that the following will be placed on the stack once Shriekmaw's cast spell resolves:
- Sacrifice Shriekmaw trigger
- Shriekmaw's ETB trigger
Now, let's say I use something like Yahenni, Undying Partisan or Viscera Seer, I could allow the top-most ETB from shriekmaw to resolve, and respond to the about-to-be sacc'd trigger and sac it with something else (or use any sort of instant-speed to affect him) and possibly negate the first sac trigger from the evoke cast?
Two things, you can stack both the evoke trigger and the other ETB in either order. You choose the order when you put them onto the stack. You can also sacrifice Shriekmaw to whatever else you want before either ability has resolved, or, as you suggested, after it's ETB has resolved before the evoke trigger resolves (assuming you stacked the triggers such that they resolve in that order. Regardless of how you stack the abilities and whether Shriekmaw is still alive when it's ETB to destroy a creature goes to resolve, the ability will still resolve and destroy it's target.

Hi would you be able to target Shriekmaw with an instant like Rushed Rebirth for example before the sac trigger of evoke resolves ?

In general, if you have a new question, post it as such in the rules forum, that way it gets seen.
When an evoke creature enters the battlefield, you'll have a chance to respond. As with the previous question, you can respond with an activated ability, but you can also respond with an instant. Some people are trying to use the new card Grief with Undying Evil or Ephemerate this way.

You are able to sacrifice an evoked Shriekmaw before it would be sacrificed to the evoke trigger.
