Let's say i cast Gather the Townsfolk , how much will i create?

For each token doubling effect you have, you multiply your original amount of tokens entering the battlefield by 2.
So for this case, you have 2 tokens entering, multiplied by 2 twice, once for each double effects, resulting in 8 tokens.
If you have fateful hour active, it’d be 5 multiplied by 2 twice, resulting in 20 tokens.

Depending on your life total, either 8 or 20. Anointed Procession has what is called a replacement effect. When multiple replacement effects affect the same event the affected player (or the controller of the affected permanent) chooses in which order to apply them and each effect only affects the event once.
Using Call the Cavalry since it doesn't have variable numbers of tokens that can be made. Once Call the Cavalry resolves it will try to make 2 tokens. There are two replacement effects that need applied. Since they both do the same thing order doesn't matter. You will double the amount of tokens being made to 4 and then double it again to 8. Both replacement effects have been applied exactly once. So nothing else affects the number of tokens made and you make 8.
