Can vehicles tap a creature to enter and attack, if an enemy artifact made that creature not able to attack?

I used ''Edifice of Authority'' on a creature so it couldn't attack that turn, but in response my opponent tapped that creature into a vehicle and then attacked with that vehicle. Is that still allowed?; since in a way he's still attacking. I'm leaning towards its allowed but I'm not sure. Also as a second part of the question, what if my card ''tapped'' an enemy creature. Can the opponent still tap it with the vehicle and attack me?

Crew mechanic is insanely hard to go around to. Even a creature with summoning sickness can crew.

Yes, a creature that can't attack, can still crew a vehicle.
Second one depends on situation. An already tapped creature can not pay the tapping cost to crew a vehicle. But if you go to use a spell or ability to tap an untapped creature, your opponent can respond to the spell or ability by crewing a vehicle with that creature.

One quick comment about the phrasing of the question's title: vehicles don't enter the battlefield when crewed. They're already on the battlefield and just become creatures.

Another way to disable crewing is to stop activated ablities of the artifact with stuff like like Damping Matrix, Ayesha Tanaka, or Lavinia of the Tenth

Vehicles are just artifacts that have an ability that requires you to tap creatures, then it becomes an artifact creature until end of turn

This card does not stop creatures from being used to crew vehicles. Ever. It doesn't matter if it was used before the crewing, in response to the crewing, or after the crewing.
Tapping for Crew is part of the cost. If the creature is already tapped it cannot crew. If a creature is not tapped it can be used for crew.
