Will stormtide leviathan and willbreaker work?

I dont know if Stormtide Leviathan and the Willbreaker will let you take your opponents creatures since the stormtide's ability effects all creatures.
Nope. The key word here is "target," which doesn't appear on Stormtide Leviathan. As such, none of its abilities have a targeted effect. Willbreaker doesn't trigger off of static abilities.

No, Willbreaker only triggers when a creature becomes targetted. Effects only target if they explicitly use the word "target". You would need something like Sway of Illusion to do what you're wanting to do here.
