I found the card while searching around online and it kinda confused me. Can somebody tell me what it does and provide an example situation for using it?

The point of Mindbreak Trap is to counter spells like Tendrils of Agony or Grapeshot because they put multiple copies on the stack and make normal counterspells like Counterspell ineffective. The exile part means that it can deal with spells like Abrupt Decay because they are exiled which is different from being countered.
A spell exists only on the stack. When you cast a spell it is put onto the stack then your opponents and you have a chance to do things in response like cast instants or activate abilities. After it resolves an instant or sorcery will go to the graveyard and anything else will go to the battlefield.
