Is this a way to get rid of rancor?

Example: my opponent casts Rancor targeting his Strangleroot Geist and I Doom Blade the geist in response to it before Rancor resolves. Would Rancor stay in the graveyard?

Rancor would go to the graveyard and stay there. Since Rancor never resolved and hit the battlefield, its ability that would return it to the owner's hand can never trigger. The Geist will come back stronger before the Rancor resolves, but it is a new target with no memory of anything it was affecting or anything affecting/targeting it previously, so the Rancor fizzles.

Rancor is one of the better Auras ever printed, but it's still beatable.

yes. At the time you kill Rancor 's target, Rancor is still on the stack. It then fizzles and enters the graveyard from the stack.
Because Rancor's text states that it only returns if sent from the field to the graveyard, its ability will not trigger.
