Gift of Immortality - Refreshing target?

So imagine next scenario:
I have a Cartel Aristocrat as well as a random creature like Fabled Hero , the latter which is enchanted with Gift of Immortality .
If my opponent plays a bounce spell on the Fabled Hero , and I sac the Fabled Hero in response, then:
Gift of Immortality will resolve first, bringing the creature back without the gift. Will the bounce spell still recognize the creature as its target and resolve, still bouncing the creature, or will it fizzle?
It the bounce resolves and I am able to replay the creature before the end step, will Gift of Immortality return to this creature or doesn't it recognize it anymore and stay in the grave?

If a card leaves the battlefield and then comes back, it is treated by the game as a new object with no memory of its previous existence. Gift of Immortality remembers what it was attached to only because the card specifically says it does, which it also does by pointing itself at "The creature that Gift of Immortality returned to the Battlefield" rather than at "The creature Gift of Immortality was previously attached to"
Capsize is going to fizzle as its target no longer exists upon resolution.

The bounce will not hit the target because it will become a new object
