Does removal stop crewing?

For example my opponent taps a crewed Smuggler's Copter to crew a Skysovereign, Consul Flagship. Can I in response cast a Grasp of Darkness targeting the Smuggler's Copter to stop the Skysovereign, Consul Flagship from being crewed or will it still be a creature until the end of turn? Thanks.

Tapping the creatures is the cost of activating the Crew ability. No one gets priority between when a spell or ability is cast and when the costs are paid. No part of the resolving of Crew requires that the crewing creatures still be on the battlefield, so there is really nothing you can do to prevent a vehicle from being crewed.

What if you play the removal first? Can they tap to crew the vehicle in response?

Yes they can. Unless specifically stated otherwise (see Whip of Erebos), activated abilities may be activated any time you have priority. So they can activate the crew ability in response to your Grasp of Darkness.
