If 5/2 with death touch blocks more than 2 creatures can you divide the damage to all creatures it's blocking or until it's toughness is 0?

What about deathtouch against something like Prized Unicorn ?

prized deals its damage like normal, and other creatures deal their damage. all available creatures must block it. deathtouch or not. doesnt matter if 1 damage kills it or 50. its still recieving lethal damage and will die after damage assignment. but all the creatures are still blocking it and not any other creatures.

What about something like Nirkana Cutthroat with first strike and deathtouch? If the first defender is the Cutthroat wouldn't that free up everything else?

no. because blockers are declared before damage is dealt. since ALl creatures must block Prized Unicorn if able, all available creature are assigned to Prized Unicorn and THEN damage happens. however, because of firststrike, there is an addition response step before the regular damage. but the blockers are still declared to prized unicorn. they just have nothing to go on no and all "Rushed over to the other side of the battle field to get the unicorn"

Assuming the deathtouch creature is able to block multiple creatures, then the Deathtouching creature only has to assign 1 point per creature being blocked.
702.2b Any nonzero amount of combat damage assigned to a creature by a source with deathtouch is considered to be lethal damage, regardless of that creatures toughness.
A Palace Guard and Basilisk Collar with a Rampant Growth can assign 1 point of damage to 4 blockers and kill them all.
to re-iterate: If a creature (whether it has deathtouch or not) blocks or is blocked by multiple creatures, those creatures must be put into damage assignment order during the declare blockers step. The creature then assigns its combat damage to those creatures according to the damage assignment order announced for it. It cant assign combat damage to one of those creatures unless each creature that precedes that creature in its order is assigned lethal damage. If a creature with deathtouch blocks or is blocked by multiple creatures, everything works exactly the same way with one exception: assigning even 1 of that creatures damage to a creature is considered to be lethal damage.
