Wanted to put urborg and coffers into my mono blue edh deck but unsure if that's legal (color identity) and if it is does it produce black mana or colorless?

Urborg, Tomb of Yawgmoth is special in that it does not have any mana symbols, making it have a Color Identity of colorless. Therefore, it is legal in all commander decks. As BlueScope said, Cabal Coffers has in its textbox, so its Color Identity is black, and therefore cannot be put in a mono-blue deck. As was also stated, mana is no longer changed to colorless when put in into a player's mana pool.

Please link all relevant cards: Cabal Coffers
It's not a legal card for a deck with a commander that has a mono-blue color identity, because it's own color identity is black (it has
in it's text box).
As for other scenarios, earlier this year, the rule for producing colored mana has been changed. Now each deck produces the mana the card would normally produce (so by playing City of Brass in your mono-blue deck, you can produce one of all of the five colors by tapping it.
