Can you respond to an instant with a creature ability?

Basically, I was playing with a friend, he was playing a Melira, Sylvok Outcast Persist deck, he managed to get the Kitchen Finks + Melira, Sylvok Outcast + Viscera Seer combo out, but didn't do anything, on my turn I played Golgari Charm to give all creatures -1/-1 to get rid of his Viscera Seer, he said "in response to that, I sac Kitchen Finks with Viscera Seer to give myself infinite life".

Is this legal? I figure he can get it to go off once in response, but I don't think you can just completely overwrite someone's turn using an ability that requires multiple triggers, am I mistaken?

I realize I probably didn't word the title very well, I should have put "Can you respond to an instant by going infinite wish a creature ability?"

Yes you can. Abilities can be used at instant speed unless is says it can't. So by sacrificing Kitchen Finks to Viscera Seer in response to your Golgari Charm is perfectly legal. His abililies would just always be on top of the stack and the abilities trigger off of each other. Your ability would not take effect until he decides the combo doesn't need to go on. So what your friend did was perfectly legal.
