Can Mirage Mirror copy Celestial Convergence to tie or even win the game?

Celestial Convergence bottom effect reads: "At the beginning of my Upkeep, remove an Omen Counter from it. If there are no Omen Counters on it, the player with the highest life wins, or if two or more players are tied for the highest life, the game ends in a draw."

If I have the highest life and copy Celestial Convergence with Mirage Mirror would I win the game since the mirrored convergence doesn't have any Omen Counters on it?

Mirage Mirror only copies its target until end of turn, and since you won't gain priority to activate it until after the criteria for Convergence's trigger is met, this particular interaction won't work. But in theory, yes you would win.

You could manage this with a second upkeep, using either Paradox Haze or Sphinx of the Second Sun. Or in silver boarder magic use Topsy Turvy to take you upkeep late in the turn.

Even if you could get the second upkeep wouldn't the copy have the seven counters as the copy would enter the battlefield?

When Mirage Mirror copies a permanent, its already on the battlefield, so it doesn't enter again. It would not have counters on it.

That's odd because if you copy a creature it has summoning sickness.

If Mirage Mirror becomes a creature the same turn it enters the battlefield, you can’t attack with it or use any of its Tap abilities (if it gains any) unless it has haste.

Correct, if any object becomes a creature the same turn it enters the battlefield its subject to the summoning sickness rule, that's why in recent years they changed design rules to make all (new) cards that animate lands also grant haste, so you dom"t need to pay attention to whether your animating the land you played for turn (lands that animate themselves aren't subject to this design rule, especially as they'll generally enter tapped anyways).
