Can I use Whip of Erebos in response to my upkeep?

Hypothetical: If I have Felidar Sovereign in my graveyard, could I respond to my upkeep by using Whip to bring Sovereign in and win the game (if I was at 40+ life at the time).

I feel like that wouldn't work, but a friend brought it up in a conversation so I am now curious.

No. The last sentence on Whip of Erebos says "Activate this ability any time you could cast a sorcery." This means that you can only activate it on your turn during your main phase, while you have priority, and while nothing is on the stack.

In addition, If you used Corpse Dance or something to recur him at instant speed during your upkeep, that would not work either. This is because the time that "at the beginning of the upkeep" abilities would trigger has already passed. Abilities cannot retroactively trigger.

What can be done is casting something like Corpse Dance during the end step before your turn. Because it says "Exile it at the beginning of the next end step," it won't trigger until the end step of your turn and will in fact be around during your upkeep to trigger. The important thing is you have to have the mana available on your opponent's turn, you won't be able to untap then cast it.
