At what point does a creature leave the battlefield?

So the situation is this; I have an Abzan Falconer and a few other creatures attacking all with multiple +1/+1 counters on them, once I have declared the attack my opponent plays Path to Exile and targets the Abzan Falconer as they have no flying/reach creatures to block with they then proceed to block my other creatures.

With that in mind my question is, at what point does the falconer leave the battlefield?

Abzan Falconer leaves the battlefield upon resolution of Path to Exile. Assuming they cast Path on the declare attackers step (which it sounds like they did), your creatures with +1/+1 counters on them do not have flying and can be blocked normally.

Gidgetimer thank you for clearing that up for me, I thought that was the way it happened just wanted to be sure. However if for example he cast Path to Exile in the declare blockers step he would not be able to block with non-flyer/non-reach creatures, correct?

Correct. Players can not do anything in the declare blockers step until after blockers are declared. This means that if your opponent decides to cast Path to Exile in the declare blockers step your creatures had flying when blocks were actually declared.

To further clarify when it leaves, it's during the resolution of the spell, before you search for the land, so if they cast Path to Exile on your Avenger of Zendikar it wouldn't trigger to put counters on your plants.
