Aether Vial Timings

I’ve heard from multiple sources that if an opponent activates Aether Vial end of your turn, that you can’t respond until their turn. But is that really how it works?

From what I understand, both players need to pass priority on an empty stack for a turn or phase to end. After the Vial activation both players ought to need to pass priority again, but that’s not how people seem to play.

So, can you immediately destroy a creature (with no etbs) vialed in end of turn?

Yes and no. Yes you can destroy a creature that was vialed in during the end step, but it will not stop any ETBs

When Aether Vial's activated ability goes on the stack, you have an opportunity to respond to it before it resolves. Something like Stifle would stop it from doing anything, but once it starts resolving, you can't interrupt that process, and the creature is going to enter the battlefield and any Enter the Battlefield effects are going to go on the stack. Destroying the creature at that point doesn't stop those triggers from resolving. You will still receive priority before those triggers resolve and again after.

The main reason for this timing is that you keep your creature from being vulnerable to sorcery speed effects but still have the benefit of being able to attack with it on your turn. An instant can be used to respond to Vial just like everything, but like Delphen7 said you won't be able to stop the Vial from activating, and if they're using it to get a strong ETB you won't be able to prevent that either.
