Q1: Legendary Enchantment Creature Haste
Lets say T3 I play my commmander Thassa, God of the Sea.
T4 I play Invoke Prejudice, can my commander then attack, or does it need to wait until T5 to attack since it just became a creature on T4?
Q2: Sol Ring
I play a Sol Ring, then I tap it to add 2 colorless mana. In response, my friend uses Naturalize. Do I still get the 2 mana or does his naturalize prevent me from doing so?

your second part is slightly incorrect.
To reiterate the first point, Thassa never leaves the battlefield, she simply becomes a creature. As long as you have controlled that permanent continuously since the beginning of your upkeep, it will not have summoning sickness.
As for Sol Ring, your opponent cannot even respond to you tapping it for mana. This is because Sol Ring's ability is a mana ability, which is a special action that doesn't use the stack and can't be responded to. He must wait to receive priority when you put a spell or non-mana ability in the stack.

Since Thassa, God of the Sea wont leave the battlefield, you will be able to attack on turn 4. It only has summoning sickness the turn it comes into play, regardless of what type it enters as.
The Naturalize will destroy the Sol Ring, but once you activate an ability it exists on the stack independent of its source. You will still get the 2 mana
